This weekend The Roe & Co Distillery is delighted to welcome El Milagro to kick off the Summer Garden pop-up series with a bright menu of authentic Mexican dishes brought to you by Julian Trejo Pascual and his mother, Maribel who are originally from Mexico City.
El Milagro combines traditional Mexican cooking, sauces from scratch and tortillas made from native Creole corn along with the best of Irish ingredients.
Julian comments,
“We’re very excited to bring you a very special menu showcasing some of our favourite Mexican classics from our pop ups, as well as some new creations we’ve been working behind the curtains for a little while. Come and celebrate the authentic flavours of a Mexican summer, paired with some delicious Roe and Co bespoke cocktails for this menu. This menu is inspired by the authentic flavours we grew up with in Mexico, while adding a little of our own twist and creations.”
Roe & Co whiskey is all about collaboration and the summer lineup for 2024 reflects that.
Running from June to September each restaurant will devise a unique tasting menu for their month-long residency and work with the team at Roe & Co to create paired custom-crafted Roe & Co whiskey cocktails.
